Have You Ever Had Rainbow Pancakes?

My son was helping me unpack some boxes last week as we continue to move into the new place. He found the (affiliate link) “Dad’s Book of Awesome Recipes” by Mike Adamick and hasn’t put it down. What caught his eye? The rainbow pancakes that are featured on the front cover.

Wesley then asked me repeatedly for a few days if we could make those rainbow pancakes. Schedules didn’t allow for it for a while. Then my energy level was too low to attempt. He began to ask less frequently and I felt bad for continually pushing it off. One morning, before he had a chance to ask, I got started on it. He walked into the kitchen and helped me mix the food coloring into each of the bowls.

This is the end result. He loved the pancakes and it has now officially been moved onto our regularly rotating cast of breakfast dishes in our home.

There are over 100 kid-friendly meals in “Dad’s Book of Awesome Recipies.” I can’t believe its taken me this long to break it open. The step-by-step instructions and 4-color photos in the book make it a great addition to our kitchen. Now on to try some new things like nutty caramel corn, cheese chicken fingers, coffee mug cookies, PB&J bites, and ice cream mud pie!
